Dubbelly Sour

So did you know that we had a wine barrel of
Belgian Dubbel hiding in the basement at the Pizza Co?
Neither did I.
That is, until I came upon the brewers dispensing of the well-aged Dubbel into 1/4 barrels a few days ago.
The sample I tasted was nicely oaky and fairly sour smelling, but there was only a hint of tartness in the flavor. Apparently, the more we use the barrel, the more sour the beer will get.
So, in went four full kegs of our dark and roasty brown ale, Hooligan.

Glad to see you are barrell aging beers now. This is one of the craft brewing industries best trends.
